INGREDIENTS
- 1 package Genius Nuggets
- 5 tbsp soy yogurt
- 2 tbsp vegan mayonnaise
- 1 ½ tbsp freshly squeezed lime juice
- 1 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp white pepper
- 1/8 tsp cumin
- 300 g cabbage and carrot, finely chopped for salad (total weight)
- 3 tbsp. chopped dill
COOKING INSTRUCTIONS
- Prepare the Genius Nuggets according to the package instructions.
- In a large bowl, whisk together the soy yogurt, mayonnaise, lime, olive oil, salt, white pepper, and cumin with a fork.
- Add the cabbage, carrot, and dill to the bowl. Mix well, let stand for 5 minutes, and serve with the nuggets.
Tip
If you want to make the salad in advance, keep the yogurt dressing and the cabbage/carrot separately in the refrigerator so that the vegetables don't lose their moisture and the salad becomes watery. Mix just before serving.
