Spring rolls with colorful coleslaw with peanuts

INGREDIENTS

  • 1 package of Spring Rolls
  • 300 g red cabbage, very finely chopped
  • 130 g red pepper, thinly sliced
  • 100 g carrot, in thin sticks or grated
  • 50-100 g finely chopped celery (with its leaves)
  • 1-2 oranges, cut into slices
  • peanuts as desired
For the dressing
  • 60 ml (4 tbsp) peanut butter
  • 45 ml (3 tbsp) soy sauce
  • 30 ml (2 tbsp) apple cider vinegar or white vinegar
  • 30 ml (2 tbsp) freshly squeezed orange juice, sweet
  • 15 ml (1 tbsp) lime juice
  • 15 ml (1 tbsp) virgin sesame oil
  • ¼ tsp. ground cumin or to taste

COOKING INSTRUCTIONS

  1. Prepare the Spring Rolls according to the package instructions.
  2. To make the salad, mix the vegetables, orange and peanuts in a large salad bowl.
  3. Whisk all the dressing ingredients in a bowl (at first it will seem chopped, but as you continue mixing it will become smooth) and add it to the salad.
  4. Mix well and serve with the spring rolls.
Tips

The salad can be made a few hours in advance by adding half the dressing and adding the rest just before serving. This will soften the cabbage a bit and the flavors will blend.
