INGREDIENTS
- 1 package of Spring Rolls with Gouda, Mozzarella, Bacon
- ½ iceberg lettuce, coarsely chopped
- 2 large green lettuce leaves, coarsely chopped
- ½ red sweet pepper, sliced
- ½ orange pepper, sliced
- ½ cup drained corn
For the dressing:
- ¼ cup freshly squeezed orange juice
- 2 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice
- 2 tsp mustard
- 1 tsp. flower of salt
- ¼ tsp freshly ground black pepper
INSTRUCTIONS
- Fry the Spring Rolls and keep them warm.
- Mix the salad ingredients in a large bowl.
- Place the dressing ingredients in a clean jar, close the lid and shake vigorously to combine.
- Pour the salad with as much dressing as you want and keep the rest in the refrigerator for another time.
- We enjoy the salad with the Spring Rolls cut on top like croutons.
