INGREDIENTS
- 8 packs Spring Rolls with Gouda, Mozzarella, Bacon
- 100 g tender baby spinach
- 250 g raw broccoli, cut into very small florets (see Tip)
- 1/2 large sour apple, coarsely chopped
- 3 tbsp dried cranberries
For the dressing:
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 2 tsp whole mustard seeds
- 1 tsp. honey
- 1/4 tsp salt + extra to taste
- 1/8 tsp freshly ground allspice
COOKING INSTRUCTIONS
- Fry the Spring Rolls according to the package instructions.
- Place all the dressing ingredients in a large bowl and whisk with a fork until smooth.
- Add the spinach, broccoli, sour apple and cranberries and mix well.
- Serve with Spring Rolls.
Tip
The broccoli stalk is eaten normally, we don't throw it away! In this salad, we cut it into very thin matchstick-like sticks.
